Seasonality is the most important ingredient Basque cuisine. Just a few blocks from our cooking school sits San Martin market, one of Basque Country’s most important markets. In this class, you’ll visit the market to shop for the day’s menu, and upon your return, work next to our chefs preparing Basque dishes that smack of the season—from Tolosa beans and their sacraments to preserves with local peppers.
