Start with meeting your guide that is either a vocational chef or a passionate foodie. Visit a lively local market to purchase ingredients. The market is the oldest market in Seville. The class can take place either in a traditional space in the heart of the old town that has been turned into an art gallery and co-work space or at your teacher's house. Both ways you will have a first-hand insight into the Spanish culture and cuisine. None of these spaces is a typical school kitchen as the idea is to show to you and share with you the local way of life.
The menu is adjustable to your taste and preferences but can include salmorejo (a purée of tomatoes and bread), or gazpacho as a starter, spinach with chickpeas, tortilla de patatas (Spanish omelet), or gambas al ajillo. Then, savor the fruits of your labor, served with a typical drink, and chat about the culinary traditions of Seville and Spanish culture in general.
